Claudio's wonderful sister-in-law gave me the recipe to make
queque chileno! So, while procrastinating homework I decided to bake some. The
queque is more like what Americans would consider poundcake, but ohhh it turned
out delicious! Claudio is still in classes currently so he hasn't had a chance
to try it. Nonetheless, the queque is like sweet bread almost and in my opinion
is pretty delicious :) If we added some pie filling like cherries on top it
would be indescribable!
Queque Chileno
1 cup of sugar
2 tbs. of butter (room temperature)
2 large eggs
2 tsp. baking powder
1 cup of milk (I used almond milk)
2 cups of flour (I used whole wheat)
1/2 tsp. vanilla extract
Directions
Mix sugar and butter in a bowl. It has to be uniform and look creamy
Add eggs and mix until everything is mixed together
Add flour (sift the flour), milk, baking powder and vanilla. Mix everything until is all incorporated
Butter a pan (like the one i used to make breads) and add it to a pre-heated oven at 350ºF for about 30-40min
When the top is all nicely brown is generally ready. Do not open the oven before the 30min to make sure it stays nice and tall.
